This homemade cordial recipe is easy to make and also freezes really well. It is perfect for sunny summer afternoons or if you need a non alcoholic cocktail option for guests. I make a large quantity of it and then pour into a container and freeze, and then whenever I want some I use an ice cream scoop to spoon a serving into a glass and add my mixer of choice. It tastes great with sparkling water, lemonade, soda water or even ginger ale and is very refreshing.
Homemade cordial recipe
450g red currants
250g white currants
2.5cm cube of ginger
1tsp grated orange rind
Place the fruit and the water in a pan and bring to the boil.
Cook for 1 minute or until the berries begin to burst, then use a fork or a potato masher to crush them.
Remove from the heat before adding the orange zest and ginger.
Stir the mixture together and then cover and leave to combine for 2 hours.
Now add the sugar and heat the mixture again until it is dissolved.
Strain over a bowl using a muslin cloth to remove the seeds and stalks. You can use a sieve but don't push the mixture through too much or it will end up cloudy.
Add to your mixer of choice and enjoy!
