The ultimate summer salsa - a BBQ salad recipe
Upstyle your BBQ offering! If you are looking for a salad to take to a BBQ, this summer salsa recipe is an old family favourite of mine and is a perfect choice. It's colourful, healthy and delicious and also completely plant-based/vegan.
If this sunny weather is prompting you to dust off your grill and you're wondering what to serve as a healthy accompaniment to BBQ meat and fish, look no further! Great with grilled fish, jerk chicken, spicy BBQ pork or just load up some tortilla chips!
BBQ Salad Recipe
Full of nutrients, this is a really healthy BBQ salad recipe and is also very easy to make. The only tip I have is to make lots of it, as trust me it will disappear fast! So scale up the ingredients depending on how many of you there are, and then add more!
1 mango, peeled and chopped
1 avocado, peeled and chopped
1 shallot or a handful of spring onions, peeled and chopped
10 cherry tomatoes cut into halves
1 red chilli, chopped
1 red pepper, chopped
A handful of chopped fresh coriander
1 lime, juiced
The ingredients all combine beautifully with the sweetness of the mango and the heat of the chilli giving it the most delicious kick. Keep the chunks small so each mouthful gets all the flavours.
It's the ultimate rainbow salad, bright and colourful and probably the most requested dish I ever get asked to make by my friends. I hope you enjoy it as much as we do!
