This summer salsa recipe is an old family favourite of mine and is the perfect accompaniment for a BBQ. It's colourful, healthy and delicious and also vegan.

Full of nutrients, this is a really healthy salad recipe for a BBQ and is also very easy to make. The only tip I have is to make lots of it, as trust me it will disappear fast! So scale up the ingredients depending on how many of you there are, and then add more!
Summer salsa recipe
1 mango, peeled and chopped
1 avocado, peeled and chopped
1 shallot or a handful of spring onions, peeled and chopped
10 cherry tomatoes cut into halves
1 red chilli, chopped
1 red pepper, chopped
Handful of chopped fresh coriander
1 lime, juiced
The ingredients all combine beautiful with the sweetness of the mango and the heat of the chilli giving it the most delicious kick. Keep the chunks small so each mouthful gets all the flavours.
