Cooking a Sunday roast during lockdown is a cosy way to spend time over the weekend. But do you ever wonder what to do with leftover roast chicken? This chicken salad sandwich recipe is a fresh take on an old favourite and in some ways I prefer it to the actual roast!

Chicken salad sandwich recipe

Chopped cooked chicken

Chopped onion

Chopped pickles

1 tsp mustard,

1/4 tsp celery seeds

1 tbsp fresh tarragon

Salt & pepper

1 tbsp mayonnaise

Toasted muffins or bread

Mix all of the ingredients in a bowl, season to taste and pile on top of a toasted bun, muffin or piece of bread. The crunch of the pickle and adding the tarragon is what makes it.
